Banana Tempura

  • 3 cups oil for frying

  • 1 ½ cups ice-cold water

  • 1 (8 ounce) package tempura batter mix

  • 3 medium ripe bananas, cut into 5 pieces

  • 1 tablespoon confectioners' sugar, or to taste

a deep fryer or large pot with 350 degrees Fahrenheit oil (175 degrees C).

A large bowl should be filled with cold water before adding the tempura batter mixture. The batter should still be a little lumpy after you've whisked to moisten the mixture and break up any large lumps.

5 banana slices are dipped in batter. Fry for 2 to 3 minutes in heated oil, or until gently brown. On paper towels, drain. Continue dipping and frying the remaining banana slices.

To serve, sprinkle with confectioners' sugar.

Editor's note: The whole amount of tempura batter is included in the nutritional information for this dish. The amount actually consumed will differ. Based on a 10% retention value following cooking, we have calculated the nutritional value of frying oil. The precise amount will change depending on the density of the ingredients, cooking time and temperature, and the type of oil used.
