½ cup white sugar
½ cup unsalted butter, softened
3 large eggs
1 ½ cups pumpkin purée
1 cup milk
½ cup cake flour
2 teaspoons baking powder
1 pinch ground cinnamon, or more to taste
Set the oven to 450 degrees Fahrenheit (230 degrees C). The baking dish should be 9 inches square.
Using an electric mixer, blend the sugar, butter, and eggs until they are smooth and creamy. Add pumpkin purée and mix thoroughly. Mix until smooth after adding the milk, cake flour, and baking powder. Mixture should be poured into the baking dish after being sprinkled with cinnamon.
Bake for 45 to 1 hour in a preheated oven or until the center is firm.
Margarine can be used in place of butter. Use four medium eggs if you only have one.
