Olde Tavern Spoon Bread


  • 3 cups milk

  • 1 ¼ cups yellow cornmeal

  • 3 eggs, beaten

  • 1 teaspoon salt

  • 1 ¾ teaspoons baking powder

  • 2 tablespoons butter, melted


Put milk in a pot and heat till boiling. When the cornmeal has absorbed all of the milk, add it and continue to boil and stir for a few minutes. Turn off the heat and let the food cool for about an hour. It will be a pretty stiff mixture.

Set the oven to 375 degrees Fahrenheit (190 degrees C). Grease a 1 1/2-quart casserole dish very lightly.

Mixture of cornmeal should be placed in a big bowl. Add butter, eggs, salt, and baking powder. Fill the casserole dish with the liquid.

Bake for 35 minutes, or until lightly browned, in the preheated oven. Serve a tablespoon hot, straight from the dish.
