Kecap Manis (Sweet Soy Sauce)

Ingredients

  • 2 ½ cups white sugar

  • 3 cups dark soy sauce

  • ½ cup water

  • ½ star anise pod

  • 2 fresh curry leaves

  • 1 (1 inch) piece fresh ginger root, sliced

  • 4 cloves garlic, minced

 

Directions
In a large, heavy saucepan, warm the sugar over low heat until it turns light brown. Stir in soy sauce gradually. Stir in the water, star anise, curry leaves, ginger, and garlic once the sugar and soy sauce have been blended. Bring to a boil by turning up the heat. 15 minutes of simmering should be plenty to dissolve the sugar. Take off the heat and let cool. Sauce should be strained and placed in a container with a lid. Place in the fridge to store.
