Jumbo Raisin Cookies


  • 2 cups raisins

  • 1 cup water

  • 3 ½ cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • ½ teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • 1 cup shortening

  • 1 ¾ cups white sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • ½ cup chopped walnuts


Bring to a boil some water and raisins in a small saucepan. 3 to 4 minutes of boiling. Set apart for cooling.

Set oven to 375 degrees Fahrenheit (190 degrees C). Grease baking trays.

Flour, baking powder, baking soda, salt, cinnamon, and nutmeg should all be combined and set aside.

Shortening and sugar should be creamed together in a big basin. eggs and vanilla after mixing. Raisins and the liquid in which they were boiled should be combined. Add the flour mixture and stir in the walnuts after that. Drop the mixture onto the prepared cookie sheets by tablespoonfuls.

Bake for 12 to 15 minutes, or until firm, in a preheated oven. Transfer from cookie sheets to wire racks to cool.
