Chorizo Burger



  • 1 pound ground sirloin

  • 1 pound chorizo sausage

  • 4 soft egg buns or brioche

  • 1 tablespoon softened butter

  • 4 ounces Manchego cheese, grated

Caramelized Onions:

  • 1 tablespoon vegetable oil

  • 3 medium onions, sliced

  • 1 tablespoon brown sugar

  • salt and pepper to taste

Ranch Sauce:

  • 1 tablespoon vegetable oil

  • 1 medium onion, chopped

  • 1 cup ranch dressing

  • 1 roasted red pepper, quartered

  • 1 teaspoon Spanish paprika

  • 1 pinch powdered saffron


Start the burgers by thoroughly combining the ground sirloin and chorizo in a big basin using your hands. While you saute the onions and prepare the sauce, set aside to allow the flavors to meld.

Oil should be heated in a big skillet over medium heat to cook the onions. Add the onions, brown sugar, salt, and pepper. Cook and stir for about 15 minutes, or until the onions are golden brown.

Make the sauce at the same time. In a skillet, heat the oil over medium-high heat. Add the onion and cook it till soft. Blend onion in a food processor. Pulse the ingredients for ranch dressing, red pepper, paprika, and saffron until mostly smooth. Keep chilled until required.

Finish the burgers by heating a grill outside to a high temperature and gently lubricating the grates. Make four patties out of the meat mixture that are just a bit bigger than the buns.

Burgers should be cooked on the prepared grill for 5 minutes on each side for well-doneness. Butter the insides of the buns after cutting them in half. On the grill, toast briefly.

Burgers should be placed on buns and topped with ranch dressing, Manchego cheese, and caramelized onions.
