3 (10 ounce) bags clean fresh spinach, roughly chopped
¼ cup butter
3 tablespoons minced white onion
2 tablespoons minced garlic
1 ¼ cups heavy cream
6 slices provolone cheese
½ cup freshly grated Parmesan cheese
salt and pepper to taste
A big skillet should be heated at medium-high. Add the spinach, and stir-fry it until it wilts. Squeeze as much liquid as you can out of the food and drain in a strainer.
In the same skillet, melt butter over medium heat. Cook and toss the onion and garlic for about 5 minutes, or until they are soft. Cream heavy and stir in spinach. Slice up some provolone cheese, then sprinkle it on top of the spinach mixture. Spinach gets coated with melted cheese after being stirred.
Add Parmesan cheese and stir. Cook and whisk the mixture until it thickens. Serve hot after seasoning with salt and pepper.
